Generally depends on the context.
If you're talking about texting, emoticons can be used to change how they want it to feel.
If there are no emoticons, maybe watch their greeting habits over a period of time.
I know "Hi" sometimes feels cold, but for some people that is their normal greeting which is something you have to watch out for.
Sometimes "Hello" can be too formal, so a lot of people generally use "Hey" or something like that.
If in person, watch their body language and facial expressions, and the tone in their voice can also let you know.
All in all, they're mainly just greetings, you shouldn't be too worried unless someone who is usually bright and cheery, that says "Hey" like 100% of the time just drops a "Hi" and is really blunt with you, something is probably up.
