I can say that negative environments do affect our health. I moved out of my parents house almost a year ago and I can say that I am much happier and more mellow than I was living with them. I have gained weight, but that is due to a condition I have no control over at the moment. But I know how you feel. My family eats nothing but junk, and it's hard to live in a house where that is there in front of you constantly. It's a big problem for the will power, and can be hard to resist.
When you move out, you can choose what you have in your fridge and pantry. So you can choose to buy only the foods that you want going into your body. I think it would help you a lot to move out. You don't have to necessarily grow your own food, but just buy fresh fruits, and go to local farmers markets. Those are great places to get fresh local produce. Also cooking meals from scratch at home is a good way to cut salt intake and also keep preservatives and other unnatural things out of your diet. That will also help you loose weight and get healthy.

If YOU feel that that's necessary, then do it. It's your life and you should live it the way you see fit. I was in a similar situation as you and I moved out when I was eighteen. Everything like watching what I ate and what I did just became so much easier. I'm just happier living on my own.
I find that I do better at eating healthy when I live on my own. I'm the type of person who won't buy junk food, but I have a hard time resisting when it's around. So if I don't buy it, I don't eat it. If other people buy it, I do.
I have to say that you have some very good reasons for leaving your home/family behind and moving out on your own.
You are correct that negative people can cause bad habits. Unfortunately it is your family and you need to get away from them. You need to be on your own and learn how to eat healthy wholesome foods that are good for you rather than having chocolate sundaes paraded around while you are on a diet. Honestly, the nerve of those people. How selfish and inconsiderate.
Anyways, it doesn't mean you have to go live in the country to obtain this better lifestyle but if it is what you think would be best for you, go for it. Have a good friend join you though. Its not good to be all by yourself in the middle of nowhere. It may very well help you out in order to relieve stress and think less about your life as you knew it in the city.
That sounds like a great plan!
