My 3-year relationship ended a few months ago. I actually blocked him from all accounts, but I keep unblocking him. The more I unblock him, the more confused I get. How can I stop myself? I don’t know how to unblock my ex.

I would say just block him and never look back. Never go back to the account to unblock him because then you are opening yourself to checking out his profile once you see his content. It's an endless struggle and battle of trying to let go but still holding on. What you need to do is never go back to his profile.
