Tell them that you two aren’t compatible in things like views or values. It’s reasonable to reject someone for that. You could say that having shared views/values is one of your values in relationships.
You don’t have to go into detail as to why you’re rejecting them. A simple, “I don’t think we would be a great match” or “I think we aren’t very compatible together” will suffice.
People don't like to be rejected, and nowadays many people don't care about religion.
