Why do guys lie about wanting a relationship?

I've been trying to go out dating being single again, and many guys are lying about wanting to date and just want hookups. Why is this happening? Can we tell a girl the truth from the jump?

Because most of them assume if they are honest and say, "I just want to sleep with you... I'm not after a relationship..." you won't give them a chance-

...which is absolutely correct in most cases.

The best thing to do is "patience." Tell him you want to take your time getting to know him (basically NO sex right away!) If a guy is genuinely interested in you and after more than sex, he will wait and get to know you- like a decent gentleman. But if all he does is discuss sex and/or your appearance? Or he starts to disappear after a few dates of no sex or physical intimacy- that's how you know what his intentions were.
