I still love amusement park dates. They're among my favorite. There was one called Thunder Dolphin in Tokyo which was my absolute favorite place to take my dates if the women were down for it. It's even more fun at night.

Then usually after the thrilling rides (the rollercoaster is only one of them), we're laughing so hard and my dates' hair might be all messed up. It's a great icebreaker and often works towards holding hands and kisses after.

I have this conjecture from how well these amusement park dates worked when I was a bachelor that maybe when you scare the hell out of your girl, she wants to find someone nearby to protect her. That's you. So she starts clinging to your arm and feels very safe around you after that as well as laughing a lot. And that can make you feel very close very fast.

It might be the next best thing short of, say, being hit by a natural disaster on a date (probably the best date possible, but not exactly something we can plan around).
