My girlfriend stopped working and gained about 50lbs this summer. I love her but that's a lot of weight to gain in 5 months should I say something?

Whoa, that is a lot. I'm certain she is aware she grew 4 or 5 clothing sizes. If you say anything, it had better be a solution that will help her lose weight.

I doubt it's her new and permanent look if it happened so fast. Maybe hang in there a bit and see if the reverse happens?

You don't have to pretend you haven't noticed, but if you point out her weight gain she might get even more depressed.

My suggestion;

You can try things like not offering soda and only offering water, skip the french fries so she's not tempted, and find alternative date activities like a walk in the park as opposed to eating out.

Next is helping her find a new job!
