She just texts excessively 24/7 which really annoys me because I’d rather get on with something else instead of this never ending texting and sometimes she will fall onto a dating topic

When you say she's falling into the dating topic do your mean it as in she's hitting on you? there's a difference btu from the sound of this so far I think they're just having a mental breakdown from being lonely and your someone they trust to vent to. I'm sure it must get exhausting.
