Slow responces, but good dates. What can this mean?

I went on 2 dates thus far with a woman who I met online. The texting has always been slow and response rates take sometimes even days. The dates are always good and she tells me she had a good time. However on text it takes forever to get a responce. I stopped texting her for 2 weeks before once again asking her how she was doing and she took 2 days to respond. After which I asked if she would like to meet up. She responded 3 weeks later saying that she was so sorry for taking so long, but would like to meet up again. At this point I am trying to think what is going on. Should I even meet up with her. If I do meet up with her, should I ask her what her intentions are? Thanks

I don't know why people live their whole lives based on how fast people respond to texts. There are some days I can't get to any of my texts. What did people do before texts? Oh, she's so slow about finding paper and writing letters and finding a stamp and getting them into the mailbox so I can read it 4 days later!

That is true. However, it does only take a few seconds to respond. Not sure what to think

thats so weird and so confusing. I would straight up tell her
" hey I really like you and I'm interested in getting to know you. How do you think things are going? " legit be direct, no point beating around the bush.
