How rare is it to completely drop out of high school in your freshman year completely?

Exceedingly uncommon. Like tiny fractions of percents. Governing that, literally, are legal requirements to educate children (speaking for the United States) -- it's very hard for parents to not educate their children.

Here's the thing -- why would you want to? Sure, maybe there's a huge trust fund or your last name is Musk or Bezos or Gates, but otherwise you need income. Even McDonald's wants you in school or a high school graduate. And if someone thinks they're going to be an influencer or a brand rep on Instagram or a Tik Tok creator and get income from their content enough to live, that's a pipe dream.

Pretty rare unless it’s for medical reasons. You can’t legally leave school without reason until you’re 16 in my country. I don’t know about the laws around it in other countries.

Yeah it is but why would you, you can't even work anywhere without at least high school
