My professor said PhD students who kept a journal log of their daily research activities sped up their graduation speed by over 1/3 so he made us write journals of our daily activities when we studied with him. I just think that my journal might take over 8 hours to write each week cause I do so many different things during my writing process.

Ouch teachers at that level are awful sometimes often making you do so much extra work!
Try and see why he wants you to what does he think you will learn or grow from doing this.
Answering this often saves work and you learn the lesson so much faster. An answer is you get in the habit of writing things down so you won't forget which is a good thing for a journalist.
a lot of them use voice recorders or just voice to text now to take notes daily
Eh, you are too brainy for this job ;(
