At work, we have team meetings every week where we outline our duties step by step. We were told it was for “process improvement.” The meetings were supposed to end in December. However, it’s been extended until employee merit reviews are done in June.
what should I think of that?

Ooh btw- after assessing my merit, I’ve found that I’ve exceeded past year’s merit. Boss has final say though.

It can mean anything and everything. Not enough information to assess.
In general, whatever they do, you have no say. If you don't feel secure, you can always start recruitment processes in other companies. It doesn't mean you must change the job, but learning current market requirements and getting positive feedback could make you feel better and more confident.
I looked over my last performance review and I’ve excelled in areas I was weaker in last year. I have the least seniority on my team. I don’t in my department though.
Company wants to see where they can consolidate, maybe who's not doing their job
