The 12 hour shifts are probably my favourite - get a lot of hours off my shoulders and gives me a better overlook on the work day (since I'm there all day, not leaving or arriving in the middle of it).
But picking in-between day, evening, night shift - then definitely evening.
There's a lot to be said for 9-5pm Monday to Friday. Though i know many people are now working 7am-5pm so they only have to work 4 days per week.
Quality of life us so important and many shift workers don't get that.
Some people need to theirs things in the early morning so choose to work from 9am to 5pm.
I've never had a regular sleep schedule in my entire long life, so a "nolabels" shift would have suited me just fine.
I never did find an occupation that has such a shift, though.
I'll work my tail off when I'm "ON", though.

I worked nights for a while. i never could get used to it and I was sleepy all the time. One time I was up an a suspended ceiling testing some cables and it was dark and quiet up there. I just closed my eyes for a few seconds and my boss found me up there an hour later, fast asleep.
I perfer night shifts unless it's a 12 hour schedule. I take 12 hour shift jobs when I can, because I value the amount of days I have off over the amount of hours I have to work in one shift!
I have been working 8 to 4 weekdays and 9 to 3 on Sundays for many years now. I can't imagine changing that routine anytime soon.
My current shift: 9am-5:30pm. I've always liked midshifts. I don't like opening or closing shifts. I've done both and despise both, lol.

We only have one shift at my job unless your coming in early or staying late or both and that is 8am to 5pm.

I've only ever worked 9 to 5, but I've always been tired for the entire duration because my natural biological clock is nocturnal.
Earlier the better. I want the rest of the day to myself.

I've mostly worked 8:30 - 5:00, but damn. Knocking off at 3:00 pm sounds sweet!
