    Because that's what they should do. Those qualifications are a wish list and often overly optimistic. Rarely will they find someone with all those qualifications.

    From the employee point of view, meeting all the qualification means they won't be learning as much. Constantly learning should be a very high priority, even higher than pay. That's especially true early in someone's career. A steep learning curve at a company is a good long term play.

    Personally, I would turn down a job that I was entirely qualified for. Accepting it would be bad in the long run.

    Because they don't know that they are unqualified. I'm a software developer and there are many people working who are barely competent and don't know it. People generally assume that others are like themselves. If someone struggles with a task, they assume that their colleagues would find it equally difficult. For example, many years ago we had a new programmer on a team who asked for some more interesting work, so we gave them a bit of code to write that the rest of the team found rather trivial, something that could be completed in an afternoon, maybe less. After two weeks the new programmer still hadn't completed the work and had no idea that the rest of us considered it quite easy.

    Like almost anything in this world, it's better to take a chance on something that may not be in your wheelhouse than to go for something you just so happen to be good enough for. It's like trying to win the lottery. You may not win but you for certain won't win if you don't play.

    Money. The only jobs I've ever gotten were the ones I wasn't qualified for. I've been self employed mostly with a few jobs in-between but I was never qualified for those. I only did it for the money.

    Because more often than not people who post jobs require decades of experience, multiple degrees, while expecting people to work off the clock, for fast food money, when all the job really requires is training.

    Not kidding on this, I recently saw a job posting requiring 10 years experience in a programming language that's only existed for two years.

    So yeah job postings have unrealistic expectations. Most companies want something for nothing.
