Why is my aunt only happy and friendly with her side of the family but quite rude with our side of the family/friends?

She also lives in another country and only see each other every 6-8 years

Could just be a clash of personalities. There could also be an issue with her past interactions with your side of the family that you don't know about.

Sometimes conflicts like that simmer under the surface for a really long time.

No. More like they remember it and hold onto resentment about it for a really long time and they don't actually say anything about it to avoid stirring things up.

Myself and brother are much younger than our extended families. My dad also is much younger than his brothers etc I think we find it hard to get along as we have different hobbies: lifestyle just nothing in common

They aren’t family I grew up with and met them when I turned 20 for the first time in person I found them difficult to get along with as they seemed a bit cliquey
