I would interpret this as she might think you're flirting just for the sake of flirting. That you might not like her actually - as a date.

Well weve been on one date a couple months after she broke up with her boyfriend of 4 years, she seemed to really enjoy herself and i asked about a second date but she said she didn't think she was ready.

As of this week we are going to get churros from a dessert bar after our dance class just us two.

Well you say she is awkward, so she probably says that a lot because she doesn't know what else to say. Shy girls can definitely be hard to read, though. If she texts you back and seems to be into talking to you, then it's probably safe to assume she's interested.

I know for me personally, I wouldn't say things that could be interpreted as flirting to a guy I wasn't romantically interested in.
