Welsh Pancakes, Pancakes The Proper Way.

In a previous pancake question, a few people confessed they use a shop bought pancake mix. I admire their bravery in admitting that, over here that's a worse sin than cheating on your husband with his dad and brothers.

The picture shows what I'd typically use to make a pancake. As you can see, it's stuff found in most cupboards, and you don't have to be too accurate with your measurements. I just don't get the point of pancake mixes that tell you just add milk and eggs. In effect, you're buying a bag of flour. Personally, I'd rather be spotted with crotch pesticide in my shopping basket than a pancake mix, I'd never live down the shame.

SO WHAT EXACTLY IS A WELSH PANCAKE?

American pancakes are, in fact, fat cheap and nasty Welsh pancakes. American pancakes use roughly an equal amount of flour and milk, whilst Welsh pancakes use a lot more milk or to be specific buttermilk. This makes them a little thinner than American pancakes but thicker than crepes.

WELSH PANCAKES HAVE LOTS OF NAMES.

If you use Google translate, it'll tell you the welsh for pancake is crempog. That's true, but that's mostly in the northern dialect. The word will be understood throughout Wales, but they go under a lot of other names depending on where you live. Here in Pembrokeshire, they're called pancocs, which is pronounced exactly how you think.

Crumpet and crempog both come from old English word 'crompeht', meaning a curled up pancake. Or the Breton krampouezh, depending on who you ask. Crumpet was also 70s British slang for sex or a women you'd like to bang.

HOW TO MAKE.

Pour 450ml of buttermilk into a pan. If you can't get buttermilk, move to a nicer neighbourhood. (Buttermilk is also a nice tangy drink.) Toss in 50g of butter and warm gentle until melted.

Now pour it on to 280g of plain flour. If you prefer a thicker pancake, add a bit extra flour. Mix well and allow to rest in the fridge, ideally overnight, but a few hours will do. Feel free to add a bit of cinnamon or pumpkin spice.

Traditionally, we use bakestones, but a decent griddle works just as well. Lots of different types of cakes can be cooked on one, and collectively, they're known as bakestone or griddle cakes. As well as pancakes, they include scones, oatcakes, Welsh cakes and many more. All are best eaten warm and fresh, and generally, shop bought versions are pretty crappy.

Stick your bakestone or griddle on the heat to warm up. A medium heat is best, and a teeny bit oil helps stop sticking.
Prepare the egg mix in a separate bowl. Two eggs, 70g caster sugar, teaspoon of bicarbonate of soda pinch of salt, and whisk until combined.

Now add a tablespoon of white wine vinegar, yes VINEGAR. It's going to bubble and fizz, which is fun for kiddies and those who never quite grew up. Chuck it into the flour/buttermilk bowl and mix well.

Now ladle a dollop of mix onto the hot surface. It's going to spread a bit, but that's OK, we like spreading. Watch for the bubbles and wait until it firms up a bit before carefully turning. Keep going until you've got a nice pile, keep warm and away from the dog.

Now spread with melted butter and trickle on your favourite sweet sauce. I'm using golden syrup because I'm out of maple and the shops closed. Now ask yourself, if your wife can't make proper pancakes why did you marry her?
