In Europe, eggs are kept at room temperature (in store, at home) because the coating protects the eggs.
In the United States, there is a law that eggs must be washed (apparently to prevent disease), which eliminates the protective coating. For that reason, eggs in the US are kept refrigerated (in store, at home).
