Heck no. I add shredded carrots into cabbage (sauerkraut), meat loaf, any meat I cook in a slow cooker. Most of time, it will just disintegrate, but add some sweetness to the dish.

Depends on the soup volume

Might be excessive on a gallon but if you're making a dozen gallons then it's frankly nothing

Would depend on the other ratios. Probably would be okay. Carrots more or less absorb the other flavors so it would be more of a texture thing.
