When do you put on the meat on the grill?

Here's the thing.. Over the past 3 months I've had my grilling life changed completely! What sucks is that it's almost May and 40 degrees daytime. Anyway, before yes with briquettes just can hardly wait to try lump!

It depends on what you are cooking. Hot dogs and burgers don't need to wait - they're fast-cooking and the higher heat is fine, so you can start cooking as soon as the starting fluid has burned off.

If you're cooking steaks, roasts, fish, chicken, etc., then, yes, you want to wait until the flames are out and you have a lot of white (and red/orange) on the briquettes. This means you have lower heat that is less likely to burn the outside and leave the inside raw, so you can cook the meat for a longer amount of time and make sure it is cooked all the way through.

After searing on the left side of the grill, the roast goes to the right side to bake.

When I cook a tri-tip roast on a charcoal grill, I put all the briquettes on one side of the grill, and I sear the roast on both sides as soon as the flames go out (the drippings will get the flames going again, which is fine) for around 9 minutes per side. Then it goes on the other side of the grill with the lid closed (vents open, of course), so that only the ambient heat from the grill is cooking it - it's not over the briquettes at all. It roasts this way for 20-30 more minutes depending on the size of the roast.

You do the same thing with a gas grill - sear it with the burners on high for around 9 minutes per side, and then move it to the other side (with no flames) and put the original side's burners down to medium, and close the lid.

Sliced tri-tip roast, hot and juicy!
