If you're cooking Roast Lamb, are you meant to put the potatoes and roast veges in at the beginning?

Are you meant to put the potatoes in the start with the lamb? Or do you wait a little bit before putting them in?

If it's a wet roast with liquid, what I've found through experimentation that seems to work best for me is to layer it in a way such that the things that take the longest to get soft and tender and least likely to burn are layered on the bottom. Then stack it that way. I think the lamb would typically be something I'd place in the middle that way.

When there's about 50 minutes to go, you put the vegetables in. If you put them in at the beginning, they'll be over.

Sounds great but I’m not 100% sure exactly how you do it I’m just a guy that eats it when it’s ready LOL
