Yes, they are considered a delicacy. There is elvers in Maine and they get like a hundred dollars a pound for them. I suspect they they will soon be fished out of existence.
Sea Urchins became a delicacy. When I was a kid I could go out with just a mask and fins and fill up a bag with sea urchins. Now you couldn't find one to save your life.
I can't remember seeing an urchin since I was a kid either
Elvers like snails have no real taste. It's why they are cooked with aromatic sauces
French have snails. The Spanish and Welsh have elvers.
Fry them alive? Gah... I guess that's barely different from how lobster is cooked, but I don't need the torturous deaths of hundreds of baby eels on my conscious. No thank you.

I would not mind trying them.
But a grown up eel - smoked - is a top delicacy to me... so I'd rather spare the kids and wait until they are adults.

I eat eel sushi but this is a bit too much. If there was nothing to eat and the choice was that or starve, I would eat it
