I adore breakfast food so much but I can’t think about food until late afternoon.. I love eggs.. poached, scrambled, sunny side up.. omelettes.. so I have breakfast for dinner a lot

Eggs benedicts are really good to eat for breakfast. It's like eggs and toast except it has a fancier twist to it.

What you seemed to make is close to it. Classic has ham & eggs on the English muffin with hollandaise sauce. The yolk is still runny though, which helps with eating the muffin.

@PBandJ_Nerd yes, this yolk is runny, also. I've never made hollandaise sauce. Do you like the sauce? I'm really not sure what it is - I'll have to look it up. 🙂

Most mornings I just have cereal, but once in a blue moon if I want to treat myself I'll make a good ol' classic breakfast: either an omelette or 3 eggs easy over, hash browns, either bacon or ham, two slices of buttered toast (jam optional), and a nice hot cup of tea or maybe some coffee. Yum! 🤤 There also may be pancakes or waffles involved in the matter too. lol
