Take a piece of meat, season it with salt and pepper and leave it to rest in the fridge for 5 minutes. During these 5 minutes you heat a frying pan with very very strong oil and you snack the meat on each side, you add butter.

To cook the meat, you need as much cooking time as rest, i. e. 5 minutes. After cooking, let the meat rest for a further 5 minutes, remembering to pour the fat over the meat to nourish it during the rest.

Next, put some fleur de sel in the pan to prevent the eggs from frying and bubbling. Then put in your eggs. Go from high heat at first to medium heat so that they cook slowly.

Once your meat has rested, you can cut it into slices, place your slices on a plate, and place your eggs on top. Then crack the egg yolk over the meat.

You can accompany your meat with potatoes or French fries, and Bon appétit!
