How do you take your breakfast sausage?

And I prefer sage or some kind of other spice (as long as it's not too overpowering), but smoked is really good too. I'm not a fan of maple syrup, or sweet and savoury flavours together in general.

One kind of breakfast sausage patty I like is something called "goetta" (the "o" is silent), which is something that is unique to the Cincinnati area. It's typically made with spiced sausage and pin oats to flesh it out a bit. It's really delicious stuff. Homemade goetta "smash patties" are always the best though.

@charliefretz329 You're welcome! I just will never understand why people buy pre-made sausage/bacon/whatever. And yeah, goetta is basically Ohio's version of scrapple. lol It's really tasty stuff! The Cincinnati area has some interesting dishes unique to there, including Cincinnati-style chili, which is both weird and very tasty. If you're not aware, just Google it. lol

Then I just eat them with whatever I have (scrambled eggs, omelette, breakfast sandwich, etc). If I'm at home, I might pour some syrup on them but i try to keep it strictly to pancakes so I don't eat so much sugar.

Kinda make my own spice mixture, then add it. Use it in all of my meat and everyone love it, plus saves time. No adding one spice at a time.

Any kind of sausage is good, but my favorite is small sausage links, pan fried to a golden brown... no syrup needed.
