Mine back in the day was 100% tacos. I could buy a loaf of meat, pork, beef, chicken, whatever was on sale in the discounted meat section, some cheap packet seasoning, dollar store taco shells and cheese and some tomato, and just eat it all week long on the struggle. Having had it so much, you'd think I'd be sick of it, but I still love that simple easy meal. My other go to was Totinos, those frozen pizza bites. They were always in the dollar store, super cheap, I could split them in half, half for lunch other half for dinner.
There's a few: Instant ramen (chicken flavored), spaghetti, and bean & rice burritos.

Hmm... I beg to differ :) That's not chicken cacciatore, that's spaghetti sauce over chicken and rice. Try this:
Cacciatore, or Hunter's Chicken, is a slow cooked delight that has tomatoes or tomato paste (or both), bell peppers, fresh garlic, mushrooms, onions, black olives and other spices. You can leave the olives out if you wish, but I like the salt kick they provide and the smokiness, especially with bella mushrooms.
It is seldom served over rice, but rather a pasta like orzo, or perhaps vermicelli, angel hair or even linguine. I prefer to start it in a skillet on top of the stove and finish it in the oven. It's best after curing a day or two in the refrigerator, but it's always good the first day too.
Here's a link to a good recipe. It's my go to meal as meal.
There was a time in my life where I would have to decide if I wanted electricity or food when I was younger, haha. I’ve run my share of extension cords out into common hallways to power my own apartment for a few days lmao.
Times like that, I’d gather up about $15, buy a pack of bacon, some just-add-water pancake mix, and some maple syrup. I’d just eat that for a few days straight, haha.
In retrospect, being NOT poor is the way😂
Ramens, believe it or not, them shits fire but loaded in sodium 🙃
Lol true
Ramen is cheap. Add some boiled egg, veggies, etc. Or basic inexpensive meals like chicken, rice, and veggies. Pasta..
Whenever I get sad, I drink boba tea and life gets a little bubblier 🙃🤭
