I don't like Aubergines especially. If I had to make a dish with it, I would make a beef, pork, veggie, rice filling, similar like I make for filled bell peppers or cabbage rolls. I would fill Aubergines with that stuff and put it in the over with tomato sauce with grated carrots and celeriac.

Love! I make a mean aubergine katsu with rice! I use the aubergine to substitute meat if i feel like just eating something vegetarian and i cut it up thickly and batter it with breadcrumbs, milk and egg and deep fry it. It’s the bomb 👌🏾

We just cube and toss them into tomato-based pasta sauces alongside courgettes and peppers. Sometimes we'll slice them thin and wrap around a mix of cheese and bread crumbs and cook on top of a chilli.
I like aubergine, I like eating it in a mixed of veggies sauté, or in legumes the Caribbean way.
