If there's two things we have in abundance here in Wales it's sheep and ice cream. Yet I've never had ice-cream made with sheep milk. So did a little Google to see if it was possible and found one ice cream parlour here that specialises in it plus a few more in other countries. But it's never become mainstream.
I assume the problem is that sheep aren't raised commercially for their milk. There are few sheep dairies, unlike with cows. Therefore, sheep milk would be a niche product and way more expensive.
I know people who raise goats and sell the milk. But sometimes it tastes funny. I don't know if that's true for sheep milk. I've never tasted it.

Good question. I suspect it has more to do with marketing by cow farmers than any technical reason. Cows are bigger than sheep, producing more meat and more milk. In order to sell the milk, farmers found two ways to use it... as a drink, and in ice cream.

Sheep produce small amounts of milk compared to the type of cows used for milk production. A good dairy sheep produces about a half gallon a day. A good dairy cow can produce 5-7 gallons a day.
BUT - sheep milk has a lot more cream than cow milk. High cream breeds of cows produce far less milk than cows used strictly for milk production.
You have to use cow milk. Nobody wants to use sheep milk if you ever come to the United States 🇺🇸 of America, come to Florida. You have to get this brand McArthur’s milk. It’s the best milk in the world. Trust me you will love it if you like milk
Jersey milk is probably the world's best. Looking at that bottle it's just a common 10 a penny friesian found on 90% of dairy farms, nothing special. Truth is the tankards just go around different farms and pool the milk together. The price you pay in the shop reflects processing costs, filtration, pasteurisation, lab analysis etc. Cheaper brands allow higher bacteria levels and cell counts which is why it doesn't last long.

Beats me. I used to drink goat's milk as a child in case I had an allergy to cows milk. There used to be a place in Covent Garden that sold human breast milk ice cream. I didn't try it.
Just the fact that something is out of the norm. People won’t even give it a try. I know that goat’s milk does not separate the cream from the milk. Don’t know if sheep’s milk is the same. So they may have to add things to make it turn into ice cream.
