I like to cook French-style, because it's more about fresh, high-quality ingredients and technique than it is using tons of spices and cooking food into oblivion. I've learned a lot about preparing and cooking vegetables in particular to get the best flavor and texture. Making sauces is a lot easier than I used to think and it's really rewarding to whip up a fresh Hollandaise over the same pot I'm steaming broccoli in and then serve it all together.

If you want to make an awesome roast, all you need to do is put it in a crockpot on low heat, use salt and pepper and put a cup of red wine (like a Zinfandel or Merlot) in. You don't even need to sear it. You can use a rump or chuck roast and let it go all day, and it will be ready when you get home from work. What happens when you cook a tougher cut of meat is that as it heats through the temperatures, the meat relaxes and then contracts over and over until it can't anymore, and that's when you know it's finished and fork-tender. I will only follow a recipe  per se  when making baked goods the first time. Everything else, I can pretty much scratch cook, either by rote experience, or educated guesses. I make all our own pork sausage (just fried up 158 patties last night and froze them) , make our own pickles, po/slaw/mac/bean salads, Waldorfs, burger patties, etc. Hint: Learn to make a basic roux and that can be the starting point for lots of dishes.

Well, I spend a lot of time on Girls Ask Guys sharing my food adventures and thoughts, and I gotta say, I'm pretty decent in the kitchen too.
