I would now. I wouldn't have when I was young.
In 1972, we were visiting Madrid, Spain. I was 9. I believe we went to Toledo because they were talking about El Greco on the tour. For lunch, I was given something that was a Spanish equivalent to Vichyssoise. I was not into cold soup and not into potatoes then, so I probably had a spoonful and didn't touch it after that.
However, NOW, yeah, I'd definitely try it although I might want to heat it up a bit.

I'm afraid I'd begin to think of France's treacherous World War To Vichy government which turned over THOUSANDS of people to the Nazis for extermination.
Yes, I have eaten it, and I think it’s delicious! Especially here in Florida, a chilled appetizer like Vichyssoise is really nice. The soup is actually just made from puréed leeks, potatoes, onions, chicken broth, in a rich cream base. It can be warmed up, but at that point it’s pretty much a very creamy potato soup.
Is there any reason I shouldn’t try it?

Looks and spelled a little to close to mayonnaise for me, so no would never try it.
It sounds good. Except for the fact that you're supposed to eat it chilled. That sounds gross to me.
