Well, it's a tricky question because you shouldn't cook all steaks equally,. A good quality fatty cut, like a Rib Eye should be cooked closer to a medium because you want all that marbled fat to melt well and provide that rich flavor those cuts can offer, if you cook it blue, you're leaving a lot of flavor unrealized.. Whereas a lean cut such as a good quality filet mignon doesn't have much fat to melt and the meat is more tender rawer and usually comes with a rich sauce (Au Poivre or others).
