I'm an older person.
There'd be no way for me to know the differences in what I eat, and what younger people eat, would there be?
Over the years, mainly as a very much younger person, I've sampled all of the items which you've mentioned in your question, leaving some of them far behind me, as my youth is far behind me.
Here's my evaluation of the mentioned dishes:
Tripe - No thanks, only if I'm in need of sustenance.
Spam - Love it, although it can be a bit salty at times.
Tongue - No thanks, again, only if I'm in need of sustenance.
Rice Pudding - Sure, why not. I've had better, and worse, desserts.
Pot Pies (tinned or homemade) - If made properly, bring them on, I love them.
If not made well, no thanks, they're a sustenance dish.
Peas - Peas are like candy. Give me all ya got.
As I bring this comment to an end, I'm conscious of having had cause to use the word sustenance more than a couple of times.
That word is there for a reason.
People have eaten sustenance foods much more unpalatable than those mentioned above, described as such by me, for millennia.
If they hadn't eaten them, the youngsters of today wouldn't be here to pose such a question.

I think old people like those dishes because as they grow up was industrial meat quality classes better and even such simple dishes like tripe or spam taste good.
Today from a wild deer remains not much, because everything from this animal tastes and smells good while cooking. Tripe is good for soups, tongue can be slowly cooked in bone broth and taste excellent with dill or horse radish sauce. Dear heart, lungs, kidneys, liver should be eaten only long cooked in a stew because of too high Vitamin A amount, that can cause a shock.

Sloppy joes, collard greens, green bean casserole.
For me, I'm young and I eat cow tripe but it's a red-chili recipe called menudo. The onion, cilantro and lime give it extra flavor. It goes really well with tortilla on the side to dip into the broth.
Old people food is anything that doesn't require a lot of chewing, since old people have poor, or no, teeth and their jaws get tired easily. Soups, pasta and noodles are examples of old people foods. 🤔
When people are young they tend to eat well. When people get old they stop giving a shit and eat whatever they want. For example when I was a kid, I remember this old man that use to go to Publix (a local grocery store) and buy a gallon of ice cream and sit out front on the bench and eat the entire thing every weekend in one serving.
I always think of Tapioca pudding. Not even sure why. I feel like that was a common nursing home/hospital trope on TV and in movies when I was growing up.

Come to think about it, as for people 70+ years of age, especially the older, how many fat old people have you've ever seen? Odds are? ZERO! They either can't or won't eat junk food, they seem to be "health nuts", for a lack of better words and go to bed earlier than they did in the past.

Fruits and vegetables
Starchy foods like potatoes, pasta, rice, and bread
Dairy and its alternatives
Beans, pulses, and eggs
Fats and oils
Lean meats
Plantains
Additionally, some foods like tripe, onions, spam, and rice pudding are associated with older people.
