Do you like big chucks of fat in your black pudding?

Black pudding is of course delicious pigs blood cooked into a sausage. But to add a bit of texture and make it moist barley and chunks of fat are added. How fatty your pudding is depends on the brand or butcher and some people prefer to see big chunks of white fat. Personally I prefer a more even distribution of little pieces.
