Flours differs. Some flour sorts contain 10% other 14% proteins. It's the "evil" gluten that makes pastry dough prevents from sticking to everything. Due lack of gluten, cysteine or L-cysteine obtained from animal hair will be used in industrial bakeries. Tasty... right. XD... I prefer gluten.

Simple pastry is quite easy, in fact, any pastry that can be broken down into fractions is relatively easy. When it cums to puff pastry and/or Danish pastry that's something I usually buy as it requires a lot more time and space than most. Pate a Choux is about as fancy as I get
I have made a few things. I made a baklava once that turned out great of not perfect. Fruit galettes have turned out great as well. But I haven’t done it a lot. I more made pizza and at times breads vs pastries.

If you can read and follow instructions properly, then you can cook, bake, or do whatever it is. It's really that simple.
Some foods require more practice and technique development though.
That's right, pastries look like magic to me, the kind of magic I don't want to touch, only admire. That may be easier than I thought, but I won't know because I'm happy not knowing
Set aside occasionally baking bread and pancakes with success, I never really tried making pastry. Potentially I'm still interested, at least to know the basics.
Do cookies count? If not, I made cinnamon rolls a couple of times many years ago. I might try it again after Lent (no sweets for me).
It's probably been 30 years since I have made any, but I once could and have high confidence that I could do it again.
