I'm asking this question because I had wanted to make palmiers (a type of french cookie). I noticed that while they seem easy to make, that it's not like a regular cookie, as it's made from pastry sheets instead of cookie dough. So, I'm wondering, what else can cookies be made from? And what is used?

I've had meringues before, but I didn't know they could be considered a cookie. Same with palmiers. I just knew meringue as a baked sweet treat very similar to roasted marshmallows. And palmiers as that one sweet flaky treat. As you can tell by now, I might not notice what is & isn't a cookie. πͺ

There are actually quite a few options other than cookie dough. For example, once upon a time, when I was in a sweet tooth and had almost no ingredients at home, I tried to make cookies with rice crackers. How? I added rice crackers the size of a watermelon seed to melted chocolate, shaped them with a spoon and left them in the fridge. If you ask me how they tasted, they turned out to be very chocolatey and crispy beauties!
You can also make really nice cookies with chickpea flour or almond flour. You can even use oatmeal at home. A little banana, some oats, maybe a few pieces of chocolate - and there you have it, a healthy cookie option!

I used to make Christmas cookies called, Buckeyes. They consisted of graham cracker crumbs, peanut butter, butter and powder sugar. They were formed into little balls and then they were dipped into chocolate.

Yeah, I figured YOU'D love `em. I do, too. I forget the recipe but, you have to use maybe half a box of crackers, a stick of butter, maybe a good part of a jar of peanut butter and a few scoops of powder sugar.
