Cawl, a lamb and vegetable soup is the most famous. There's no set recipe but generally it's root vegetables, leeks, and lamb, in a flavourful broth. Usually its topped off with cheese. It can vary in quality a lot, the best takes a long time just to make a nice stock but you will get nasty cawl made with a stock cube and frozen veg in places.
