We have a sausage called Salceson. It contains cooked beef tongue, blood, beef stock, spices. It doesn't look very tasty but it tests good as slice on a butter bread.
The other sausage I like is Bółczanka it's very similar to German Semmelwurst. It contains blood, pork, kidneys, liver, wheat bun pieces, spices (garlic, black pepper, marjoram). Even though this doesn't sound especially tasty it was surprisingly good once I could overwhelm my disgust.

Only blood food I'm familiar with is blackpudding. It's nice but it's got to have the right blood to fat ratio, not that nasty stuff with big massive fat chunks that pretends to be posh.

It's illegal to sell fresh blood to the public in the UK so sadly a lot of traditional dishes like gooseblood pudding have died out. I know the Italians do a blood dessert sanguinaccio but I've never seen it in the uk

Full breakfast without black pudding isn't full. It seems there are many sorts of blood sausages in UK but they are called generally black pudding while in other European cuisines those sorts have different names.

Re update salceson. That's generally known as brawn in England and headcheeze in America. Here in wales the name for sausage is selsig and comes from the same origin as salceson- the Italian salsicca. Brawn here is very much seen as old people food.

Yeap, blood doesn't bother me and I learned a bread recipe earlier in the year that uses blood as it's main ingredient.
