Recipes vary a lot, google pics turns up thousands of versions yet all recognisable as the. dish. I make mine with lamb, others with beef or ham shank, all are good and everyone insists their way is the right way.

@purplepoppy by the way, in Liverpool, it was called SCOUSE, which was a main dish at the PANAM restaurant and bar. Unfortunately, we didn't have the time to go in and try it.
Allegedly it was invented by some ships cook called lob and means Lob's course, which is why it's popular in port towns. I've no idea why Liverpool dropped the lob bit while everywhere else kept it.
