
Is it OK that I don't like Mac and Cheese?


I never grew up eating it and have no idea why it's so popular. Macaroni is not the best tasting pasta and ladling on cheese simply makes it a "base" for cheese, and masks the flavor of the pasta.
I have a similar opinion about broccoli with cheese. Fresh broccoli with lemon or salt and pepper is wonderful. Cheese all over it masks the flavor of the vegetable.
I think cheese should be an accent on pasta. Not the reason pasta exists. Vegetables, meats, seafood and pasta should all bring out the best in each other! Like spinach lasagna, ratatouille, shrimp scampi and so on. So much more exciting and satisfying.
It's practically white roux hardened with milk and cheese mixed with macaroni and spices. It's very simple receipt and it taste that way especially made with this orange "Cheddar" block from Walmart. Of course real Cheddar, Gouda, Parmesan, Pecorino, sweet cream could make it better and edible but If I think Spaghetti Gorgonzola or Carbonara with grated Pecorino beats it easily, especially if made with smoked ham pieces and roasted garlic.

I've had some really flavorful, home made mac and cheese. But most of the time it is bland. And the gloppy texture doesn't turn me on.

I'm not a fan of mac and cheese and didn't really have it growing up much either... literally maybe a couple times. But one of my guilty pleasures is spaghetti with melted cheddar cheese and ketchup. It's lazy, but it's good comfort food. Italians can give me all the hate they want.
Try without the cheese. Add vanilla essence, hint of cinammon, tarragon.
Or if you like carbonara, hold the cheese and bacon, fry porcini and swiss brown mushrooms with thyme and red wine vinegar, use the porcini liquid to deglaze instead of white wine. Mushroomy-eggy goodness.

(And yes I just make this stuff up based largely on what , but have cooked, did enjoy. And lower fat, very low salt.)
A lot of people really enjoy it. For me it’s just okay at best. I think they like it as comfort food. The type I like best is the cheapest box version with the powdered cheese. The versions with multiple good cheeses don’t do anything for me. Most people though seem to love it. I don’t know why but I suspect it is more sentimental than anything.
People have different tastes and preferences. It's perfectly okay to dislike Mac and Cheese.
In fact, that's fantastic. More Mac and Cheese for me, one of my favorite foods. 😀

I used to love Mac and cheese as a kid but now I’m that person who likes to cook my pasta and put my own cheese on it. Then I can control how much cheese goes on it.

I do indeed like Carbonara. But you can buy mac and cheese frozen from Stauffer's. And that will fill your stomach, without a lot of work.
