Yes, many times, and in so many different ways 😄 I love eggplant, especially grilled with olive oil and garlic, or baked into Italian parmigiana with tomato and mozzarella. In Japan, I once had miso-glazed eggplant that was silky and slightly smoky, almost dessert-like in texture. It’s one of those vegetables that completely transforms depending on how you cook it. 🍆🔥
