Thanks!

Ham roast marinated 2-4 days in natural butter milk or blended fresh pineapple mush.
This makes meat tender in gives slightly sour taste.
(few clove seeds, white pepper, salt 15g/1kg meat, sugar 5g/1kg meat, optional garlic powder)
Ascorbic or citric acid used often in butter milk will make meat dry, that's why it should be double checked. Pineapple need to be fresh because it contains enzyme which decay by heat, those enzyme make meat tender.
Sweet potato casserole will definitely be on the table for Sunday dinner at my parents home where my family will be. Creamed corn, green been casserole, strawberry fluff are just a few of the other things that will be on the table. And knowing my sister she will bring those rabbit molded butters just daring the first one of us to dig into them.
Here's something from Southern US culture that I grew up with. Yes, it's weird. But it works. Beans and cornbread. Any white beans will work. Navy beans, cannellini beans, great northern beans. Skip the radishes and douse the whole thing with ketchup.

Also a New Year's tradition, ham with black eyed peas and cornbread. And once again ketchup.

Preferably a bone in ham with a nice crust on the outside and juicy on the inside.
With ham, I like scalloped potatoes...

... and green beans...
For Easter ham, I love balancing salty, sweet, and fresh flavors 🐣
Creamy scalloped or au gratin potatoes are classic and comforting. Roasted carrots with honey and thyme or brown sugar glazed carrots work beautifully with ham’s smokiness. Bright sides like green beans with lemon butter or a simple asparagus sauté add freshness. A pineapple stuffing or roasted pineapple rings give a nostalgic, slightly tropical twist 🍍

We usually do about the same side dishes as Thanksgiving or Christmas. Potatoes in some form, veggies, stuffing, etc. Except with Easter dinner we add Chocolate bunnies! 🐰
Oh , and deviled eggs too since it's Easter!

Cheesy potatoes!
I recently came around on green bean casserole. Long time favorites include mashed potatoes with gravy, roasted or broiled Brussels sprouts and/or broccoli, and sweet potatoes.
I have been to parties where people served ham with cooked pineapple and baked beans and Pizza Hut has a ham and pineapple pizza called the Hawaiian. So pineapple is compatible with ham.
I'm a vegetarian, so I eat only seitan ham... any of the vegetarian side-dishes are fine ;)
