There are thing they call words, it doesn't even have to be face to face. These are the words you need. I like you, if I say I was drunk later I'm lying, I really want to date you, if I don't have a chance please just tell me.

I would suggest sending this when you know she's asleep and won't wake up anytime soon. Go to sleep immediately after and don't check the reply for 24 hours... you'll be fine.

It's most likely she wants to keep it friendly. Just because she wasn't interested, doesn't mean she wants to cut things off completely.

Yes it it makes it hard for me to move on. Partly because she never properly rejected me. But she shows signs she's not interested but I literally can't get rid of her and it's annoying.

The reason I ask is because I mistakenly rejected a guy I liked once... but i didn't actually realise he was interested. He was just really shy, which I took for dislike.
When that penny kind of dropped that I might have read things wrong, I did try to fix things ( he started avoiding me in the way that you are) I went out of my way to try and be nice to him because I wanted things back the way they were. I wanted him to hang out in the same places as me the way he used to.
I did give up eventually. So will she.
Do you really want her to give up on you though? If there is still a chance?

@gomalley411 I told her I've never seen her as more than a friend because I was sure she wasn't interested. Mainly because after I sent her some flirty texts complimenting her, she was awkward around me (she never was before) and then after that I asked if she wanted to hang out again (just us 2 like we once did before) and she said we should go as a group. That in my opinion is just rejecting me in a nice way.

You also told her you liked her friendship, so here here she is being friendly to you. Why don't you simply try being straight with her instead letting your pride front for you.
If you want her to leave you alone, make it obvious... but don't change your mind later.
If you like her, tell her. She's not a mind reader.
