From the way the dialog in the update is phrased, it looks to me as if you seem to be observing her closely and I would even say controlling her. You seem to write down every even very precisely and use AI to check on her and your relation. This kind of behavior is never going to work on a long term relationship and based on your statement, I do understand why your girlfriend states she wants to reset the relation.

The problem is that even if you give her 3 weeks to think the entire situation over, you (meaning you and her) will get back on the wrong track and habits and with the next argument the same situation will arise.

I believe being friends (without benefits) is the best solution for both of you.
