What does it means?

Yesterday I sent my Christmas wish one girl which I did some work for her 2-3 months ago. We knew each other only for short period of time and we stopped to see each other and text after it 2-3 months ago.
She replied to my message with Thank you also Christmas wish and this: I actually thought of you today :)

She is 27 yo alone and religious. She knows that I have serious relationship (she doesn't know anything about it. How my relationship is set up etc.)

Can this mean something?

It really doesn't mean a whole lot given the context. I know that isn't what you want to hear but it is the truth. It simply means she had a memory and nothing more. I am sure that you can relate and have random memories from time to time. Is this 100% for sure it means nothing? No because nothing is ever 100% and only this girl truly knows how she is feeling about you and what she meant by the text. All we can do is guess and it is my guess that it was Christmas and some memory popped into her head about you when you messaged her. The second thing I can think of is that she was trying to be nice and is making that up. She didn't know how to respond after months of no contact and decided to "throw you a bone" as they say.
