Guy Who Supposedly Likes Me Acts Avoidant?

A lot of my coworkers have told me that a guy at my work is interested in me and has talked about it amongst them many times. But, he acts very nonchalant or uninterested sometimes.

I ran into a group of coworkers outside of work once, without him there at that time, and one of my coworkers saw him later where she told him “I just saw (my name), we should go back and say hi to her (she suggested this because of the fact that he’s interested in me)!

To which he responded with, “no, no, no!”. She says he’s ‘shy’ but why would he respond that way if he’s supposedly interested? And why would he act nonchalant, like he doesn’t care? I’d like to give it a try with him, but his response in that situation and his weird behavior confuses me?
