Why would he say he wants to go on a date with me as soon as possible, ask me where I wanted to go, say he liked me, kiss me on the forehead, say I was pretty, said he loved my humor, constantly hold my hand or my face, cuddle me in the morning even though he had to leave for work, but now hasn’t contacted me the last few days even though we were supposed to go on our date this week?

He might have his own issues that have nothing to do with you such as unexpected bills that drain his dating money or new problems and responsibilities at work or obligations with family or sick friends, as challenging as it is, you would be happier not basing your feelings around his reply frequency.
