There can be various reasons why someone might talk about their ex. One reason would be that they are expressing how they expect a partner to act, thus they are vetting the person they are talking to when they see how they respond to what they say. I would say women are more guilty of that sort of behavior than men, but men can do that as well.

It's likely the same sort of thing happening. The difference would be he doesn't have the guts to break up with her yet because he's afraid to be alone (i. e. a serial dater), but he's looking for a replacement. He might be the type that cheats on women as well... Obviously if you have serious relationship issues with someone that can't be resolved and it's not going to last, you just bite the bullet and end it and then move forward in life.
