There was a guy I had a situationship with years ago, nothing serious and it only lasted a few months, anyways he has a girlfriend now of 3 years so happily settled etc and we’re just good mates. Anyways, he has a habit of constantly asking about my dating life. Last time he saw me he asked if I had found a boyfriend yet. He just came back from a holiday and the first thing he asked me was if I had been on anymore dates (bearing in mind I had told him a few weeks ago that I’m just going to stop trying and not bother anymore). I had been out for dinner a few times over the last few weeks and I had posted photos of the dinner so I get why he thought I was on a dinner date but I find it’s weird when guys ask especially when I know deep down he doesn’t care like he never really was interested in knowing until a few months ago when I said I went on a few dates with one particular guy. I just wanna know if this is normal because none of my other guy friends ask me. As a girl I like asking my girl and guy friends but I find it’s not really a topic of conversation for guys to ask…

You've been allowing this guy access to you without him having to provide anything in return. It seems to be an ego thing for him if what you are describing is accurate. In his head, once you are in a relationship he would be denied access to you and that is why he is so concerned. It's not any of his business and he should preoccupy himself with his girlfriend.
