Why are people so idealistic when it comes to finding a spouse?

I watch dating shows on YouTube and I notice that men and women are so idealistic. I wasn’t paying much attention to the men but a lot of women would reject men based on the wrong shoes he wore, or he had a piercing she didn’t like or he’s bald. lol. Are you serious?
