Why would a man I see around appear smooth and confident then become a bit awkward and quirky?

He’s just a guy I see at my job who visits his family at this facility.. I noticed him maybe after the 5th interaction.. he always waved, smiled, had a small conversation about my shoes… when I say smooth I don’t mean player but he was just a man who was nice and noticed me… but for some reason he seems more awkward/ quirky/ shy… it’s hard to explain but even his look and demeanor changed.. he’s starting to act like his 80 year old country father, talk like him… something completely changed and it’s so weird
